Eggnog Pound Cake - A Holiday Tradition

Every Christmas, my kitchen fills with the sweet, comforting scent of this Eggnog Pound Cake. I’ve been making it for years, and without fail, it’s one of the first desserts to disappear from the holiday table. Friends and family ask for it year after year — it’s that perfect blend of buttery pound cake goodness and the cozy flavor of eggnog that just tastes like Christmas.
Ingredients
- 1 (16-ounce) package pound cake mix
- 1 1/4 cups eggnog
- 2 large eggs
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F. Lightly grease a 9x5-inch loaf pan and set aside.
- Mix it up: In a large bowl, beat all ingredients together on low speed until blended. Increase the speed to medium and beat for 2 more minutes — the batter should be smooth and creamy.
- Bake: Pour the batter into your prepared loaf pan. Bake for about 1 hour to 1 hour and 5 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Let the cake cool in the pan on a wire rack for 10 minutes, then remove it from the pan and cool completely -- about an hour.
Tip: Every oven is a little different, so start checking for doneness around the 55-minute mark.
