Texas Sized Taste - Texas Hot Sauce



Howdy Pardner! As you (or ya'll - [pronounced y'aaalll] as we say here) have probably heard, everything is bigger in Texas. Bigger cars, bigger hair, you name it. :)

And that includes hot sauce. What makes this hot sauce so darn good (in my opinion) is the way it is made. I think boiling the onion, tomatoes and peppers before blending really helps bring out the flavor. Try this and see if you don't agree.

4 large jalapenos (I only used 3)
1/2 large onion
3 medium tomatoes (I used 4 Roma tomatoes)

Take stems off jalapenos and rinse all the above. Put to boil until soft. Put in the blender, then add fresh garlic (4-5 cloves), 1 tsp. salt, 1 1/2 -2 tsp. ground cumin.

Blend until seeds are gone. Add 1 small can of tomato sauce.

This can be enjoyed warm, or serve chilled.
