Anna's homemade Pico de Gallo...

If you've spent any time at all archiving my blog posts, you have noticed we love food. And especially any kind of Mexican food. This is my homemade Pico de Gallo. I love sharing my recipes with you, but when it's my own recipe I confess I rarely measure, so it's hard to give you exact amounts.

But because I love you SO much, I'll give it my best.

Here it goes...

You will need:

2-3 tomatoes (depending on size, and how much Pico you want to make). I usually use large slicing tomatoes or Roma tomatoes. It just depends on what I have on hand, and/or what's on sale.

1/4 to1/2 white onion (chopped)

1/2 - 1 jalapeno pepper (chopped)  Note:If you want less heat, remove the seeds first.

1/4 of a bunch of Cilantro (chopped) - You can chop Cilantro with the stems. Chopping it releases the flavor.

Add all chopped ingredients to a bowl and mix well. Then add in your dry seasonings.

A pinch of Garlic Powder and salt, then more salt to taste. You will need quite a bit of salt. :)

Generally, Pico is made with lime juice. I use a splash of lemon juice just because I prefer the taste. 

Fortunately making Pico isn't an exact science, so you can just sample as you go and add more of what you need.
